Nut
and Banana Energy Bar
This nutritious sugar-, dairy- and wheat-free energy bar is
simple to make, tastes good and
will give you an energy boost or
curb your sweet craving.
Ingredients
1tsp vanilla essence
1/4tsp cardamom
1tsp ground cinnamon
9oz (250g) peeled banana (about
two)
4tbsp sunflower oil
50g (2oz) cashew nuts
50g desiccated coconut
organic oats
one peeled and grated apple
Method
1. Blend vanilla essence, cardamom, ground cinnamon, banana
and sunflower oil together.
2. Add and blend the cashew
nuts, followed by the coconut,
organic oats and, finally, the
grated apple.
3. Spoon into a greased 9”
baking tray and bake in centre
of oven at 190°C (375°F) or
gas mark 5 for 25 minutes for a
chewy bar and 30 minutes for a
crispy one.
4. Mark into wedges or squares
while still warm.
5. Add raisins for a change or sprinkle the top
with sunflower seeds five
minutes from the end of cooking
time, or enjoy a large slice
with hot soya custard.
