Our menus have offered vegetarian options for as long as I can remember – and believe me that’s a long time – but everyone needs a little new inspiration from time to time, and when we decided that we wanted to extend our repertoire of dishes for vegetarians, where better to go than the internationally renowned Cordon Vert School.
Armed with whites, knives and just a little trepidation about going back to the schoolroom, the Shire Hotels Chefs arrived at the stunning Victorian mansion that is home to the Vegetarian Society. We spent 2 fantastic days in the company of Alex Connell, a veteran vegetarian chef with over 20 years knowledge and experience that he was prepared to share with us.
What did we gain? So much more than our coveted Diploma’s – it’s more a way of creating dishes using flavours and ingredients that we might not have considered. Without exception, every dish we cooked deserved a place on our menus, and I can see all the Chefs using these on our daily specials to give variety and interest to our guests.
